"Dark hued robe; the bouquet is going to blossom well, has an intricate depth, notes of blood-iron, herbes de Provence, thyme, tobacco, with a cooked raspberry, coffee intonation. The palate bears suave richness, glides along, is centred on its Grenache plum, spiced content, accumulates intense juice towards the finish. It has the sève [sap] of old vines in its relaxed oiliness, as well as a magical feathery tone, and will be of interest from 2028. There are details that will stimulate upon opening. 2051-53"

"Dark in color, the wine pops with licorice, black cherries, black plums, and flowers as soon as the wine hits your glass. On the palate, the richly-textured wine is lush, polished, deep, balanced, and long. There is intensity, purity, length, and depth of flavor with a creaminess to the tannins, along with chocolate, licorice, and black pepper in the endnote. This will age quite nicely. The wine is produced from 95% old vine Grenache with 5% coming from various, assorted, allowable grape varieties. This is one of the wines of the vintage. Drink from 2025-2040."

It's expansive, with gently sweet, vibrant black cherry and kirsch notes within soft, pliable fruit tannins and a long finish. A remarkably precise and balanced wine, not the most powerful this year, but one of the most drinkable. Mostly grown on sand, fermented in stainless steel then aged in tronconic wooden vats. Drinking Window: 2026-2035."

Almost entirely Grenache from a couple of old-vine parcels on sandier sites than the majority of the domaine's offerings, it's a beautiful wine by any measure. Drink: 2023-2035."

"Last of the wines from bottle, the 2020 Châteauneuf Du Pape Le Secret Des Sabon is a field blend of mostly Grenache that sees a touch of stem inclusion and aging all in oak tronconique tanks. A candidate for the wine of the vintage, it has a similar bouquet to the Prestige and has beautiful red and black fruits (even some blue fruits), flowers, garrigue, and spice. This carries to a full-bodied 2020 with a layered, seamless mouthfeel, moderate acidity, no hard edges, and a great, great finish."

Das Weingut
Der Name Sabon ist bereits seit dem 16. Jh. mit dem Weinbau an der südlichen Rhone verbunden. Und so zählt Roger Sabon zu den großen Traditionalisten der Region, die die althergebrachten Methoden pflegen, wie z.B. die Verwendung von Fudern (also keine Barriques). Wenn allerdings Verbesserungen möglich sind, ist man stets aufgeschlossen, sinnvolle und behutsame Änderungen vorzunehmen. So werden seit Neuem die Trauben vor der Maische komplett entrappt, d.h. von Stielen und Stengeln befreit, um so weitaus weniger „sperrige“, sondern viel weicherer, seidigere Weine zu erzeugen, ohne dabei an Komplexität und Charakter zu verlieren.
