Dark red. The nose has firm aroma of raspberry and red cherry fruit with some menthol, rosemary, local colour. The palate is tightly drawn, has inner strength, runs with some punch and assertion. The tannins are full and require another five years. This has good heart and genuine local virility. It finishes on a fresh tenor, with those crunchy tannins. It has a good swing in its step, is a convincing wine. 15°. 70% Gren, 20% Syr, 5% Mourv, 5% various. 2021. 2037-39"

Crème de cassis, olive tapenade, smoked herbs, and licorice notes all emerge from this remarkably pure, seamless, gorgeously refined and elegant Châteauneuf-du-Pape. It shows slightly more Syrah character, has a multi-dimensional texture, and a layered, elegant style that just begs to be drunk. It can be drunk today or cellared for 15 years or more."

Das Weingut
Der Name Sabon ist bereits seit dem 16. Jh. mit dem Weinbau an der südlichen Rhone verbunden. Und so zählt Roger Sabon zu den großen Traditionalisten der Region, die die althergebrachten Methoden pflegen, wie z.B. die Verwendung von Fudern (also keine Barriques). Wenn allerdings Verbesserungen möglich sind, ist man stets aufgeschlossen, sinnvolle und behutsame Änderungen vorzunehmen. So werden seit Neuem die Trauben vor der Maische komplett entrappt, d.h. von Stielen und Stengeln befreit, um so weitaus weniger „sperrige“, sondern viel weicherer, seidigere Weine zu erzeugen, ohne dabei an Komplexität und Charakter zu verlieren.
